Molly Goes West

So for work this week we traveled to two ranches in North Dakota and South Dakota. The drive out was pretty long- Indiana, Illinois, Wisconsin, Minnesota- the first leg of the drive.

On our way back we took a different route and went into Nebraska, Iowa, Illinois and Indiana. Five new states for me! Super excited. The trip was awesome!

The beautiful Badlands!

We were lucky enough to visit SD during Sturgis Bike Week ;)

Gorgeous

Baby Jack was cute as a button. He was a little shy all morning, but finally warmed up right before we left.

When in SD, one must pick a bouquet from the pasture.

Oh hey, America!

The buffalo. I was about 50 yards from these guys, not really thinking of the danger that they could at anytime start charging at me! …Yolo?

Recipe: #Crocktober Cheesy Potatoes

I love potatoes. And Cheese. So of course my favorite food is cheesy potatoes. Which is super easy to make.

- 1 bag of frozen home fries

- 1 cup of sour cream
- 1 bag of shredded colby jack cheese

1. Place frozen home fries in crock pot filled with 2 cups of water.

2. Turn on LOW and let cook for around 2.5 hours. (Or turn on HIGH to speed up the process)

3. Drain water from crock pot and add in the sour cream and cheese.

4. Mix all together so all potatoes are covered.

5. I turned the crock pot on HIGH and let cook for 1 hour so all the cheese would be melted.

6. All finished! Enjoy

Recipe: #Crocktober Sausage & Beer Queso Dip

Sausage & Beer Queso Dip!

Yes, I know sounds a little iffy! My boyfriend made it one evening and I didn't even know there was beer in it until I saw the can in the trashcan. Therefor, you could probably make it without the beer and it taste just as yummy!!! He also cooks without a lot more seasoning than I do! :)

2 (16oz) cans of refrained beans
1 (4.5oz) can of chopped green chiles
1 cup salsa
1 small block of Velveeta cheese
1 roll of Jimmy Dean sausage
1 cup of beer (Coors Light!)
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/4 cup chopped cilantro

1. Brown the sausage in a skillet, then drain the fat

2. Meanwhile, combine the salsa, refrained beans, green chiles, ground cumin, garlic powder and oregano in the crock pot

3. Proceed to mix in the sausage, Velveeta and beer

4. Cook for 2-2.5 hours on low

5. Mix in the chopped cilantro shortly before serving

6. Serve with tortilla chips and ENJOY!
